The oyster mushrooms come from the Dordrecht Growers’ Guild, and he uses them in dishes such as the vegan oyster mushroom roti masala. Everything at Boer’n Bontje is fresh, 100 percent halal, and just a little bit different. The entrepreneur’s Surinamese background and curiosity about the Mediterranean region are reflected in the authentic dishes. The menu features sandwiches and roti, as well as oso preti (home-style dishes) such as brown beans with rice and chicken, bulgur with köfte and eggplant, and rice with pom, vegetables, and chicken. “The flavor profile is international, but most of the ingredients are local,” says Jermain.
