In the cozy Bistro La Bohème, Ron and Jackie van de Merwe combine their culinary, hospitable strengths and follow their shared passion for the culinary. The bistro dishes actually feature tasty seasonal products all year round, so now in the spring as well, says Chef Ron. "We like to work with that, to offer guests something different every season and therefore variety." So if you dine there in the coming weeks, you will see asparagus on the menu, the Hollandse Nieuwe with beet salad or an apple, for example, or from June the redfish fillet. But zucchini is also a fine seasonal product, according to Ron. "For example, I make a delicious zucchini carpaccio out of it. A fresh dish, ideal for spring and summer. And it's vegetarian, so it's a nice dish for everyone. I also use celery a lot, for a nice crunchy effect in salads. But pods or broad beans are also good seasonal ingredients."
In the museum restaurant of the Dordrecht Museum, you can enjoy all kinds of seasonal dishes. How about a seasonal soup like asparagus soup? "As soon as it's the season for asparagus, you see these with everything," says Christiaan Visser. "Asparagus is delicious with smoked salmon or ham and with butter sauce. Actually very classic, but people find that tasty and so it's on our menu." "At Ferdinands we have a pretty classic approach, which means we like to serve asparagus with ham, a nice egg and boiled potatoes. Or we make a fish dish with asparagus. But if someone wants asparagus with their steak, of course that's possible too." Rhubarb is another seasonal product that can be found in Ferdinands' kitchen at this time. For more than 35 years this fish restaurant has had a completely new menu every month, up to six courses if you feel like it. This allows the restaurant to respond very well to the season, explains Mark Bakker. "We are always guided by seasonal produce because they we change menus so often. It's very much in our ideology to work with products that are ripe in season and therefore tastiest. We look carefully at our fish and vegetable supplier's offerings, so we can always offer great seasonal produce." Take vegetables, for example: according to Bakker, the greatest seasoning, which really determines taste in a dish. This season De Stroper is again teeming with tasty seasonal products. In terms of fish, these are particularly the skate wing, sunfish and tuna yellowfin. "In addition, the white asparagus is very tasty, another product you see frequently this season."
